Walnut Fudge Blondies

Ingredients

Ingredients for the Blondie

  • 230 gram Butter Melted
  • 200 gram Dark Brown Sugar
  • 200 gram Light Brown Sugar
  • 2 large Eggs
  • 1 Egg Yolk
  • 1 tsp Vanilla
  • 1/4 tsp Salt

Ingredients for the Fudge Filling

  • 200 gram Fudge Candies cut in to cubes
  • 3-5 tbsp Heavy Cream
  • 125 gram Walnuts or pecans

Instructions

  • In a sauce pan, melt the butter and mix with the brown sugar.
  • Blend with a rubber spatula until you have a smooth mixture
  • Add the vanilla, salt and last the eggs and egg yolk and blend in to a smooth batter
  • Line a 20 x 20 cm or 8 x 8 inch pan with baking paper. The fudge can get sticky when it cool's down so make sure its well lined.
  • Pre-heat the oven at 180 C
  • Pour half of the batter in to your pan and bake for 15 to 17 minutes.
  • While the bottom half of the batter is baking, you can prepare the fudge filling. Place your Fudge candies in to a microwave save bowl and add the heavy cream. Microwave for 30 seconds at a time steering until the mixture becomes a caramel sauce. Depending on the candies you are using you might need to add more or less heavy cream. Do not use hard caramel candies, use soft fudge candies.
  • Take the half baked pan out of the oven and let it cool for a few minutes, crush the walnuts in to smaller pieces and spread them evenly in the pan and pour the fudge sauce over them. Try to get an even layer on the Blondie.
  • Let it cool for a few minutes and then add the rest of the batter to cover the fudge layer evenly. Now bake for 30 more minutes.

Notes

You can make this recipe with only Dark Sugar if you like a Rich cane flavour.
